About a week ago, I made a traditional Central Asian special bread called Noni Samarkandi that’s usually made in tandoor (clay oven used to make bread.) It is a very famous bread, mostly for its look and amazing taste. I will also try to make this as simple as possible. Unfortunately, I forgot to take step by step pictures for you to see the whole process of making this bread.
“In Central Asia, bread is such a basic staple food that you get it with literally every meal, without asking for it. If you visit someone’s house, they will bring you bread and tea.”
Here is the recipe for the one I shared on Instagram, as promised.
Things you will need:
1 1/2 cup Almond or Coconut milk – (room temperature)
1 tbsp Yeast
1 tbsp Sugar
2 tbsp Salt
1 1/2 cup Dairy free butter ( I use Earth Balance) melted
Sesame seeds for decoration
Pour flour on a bowl
Pour your almond or coconut milk in the middle, preferably room temperature
Stir in salt, sugar, and yeast with milk, and wait for few minutes until it’s bubbly turns into a foam.
Mix them all together and put the rest of the milk until it is a semi-solid dough. ( if you put too much milk then put more flour)
Start kneading the dough in a clean surface sprinkling it with flour, so it’s not too sticky
Put on a bowl and let it rest for about 40 to 50 minutes, until it rises (when it’s risen, it is ready)
Divide it into two or more dough bowls, depending on how small you want them to be
Take one dough bowl and roll it out into a circle, not too thin and not too thick, you can also use your hands.
Press the middle of the dough with your fingertips
For decoration I used fork since I didn’t have Mehpar (bread stamp) that is usually used in Central Asia (Thanks to Google, I found Bread Stamp’s picture below)
I used my fingers to decorate it, I just pinched the ends of the dough to make it look like a flower (you can get creative and artsy and play around with it) Or just use the fork for the middle of the dough, kind of stamp. Stamping your bread, to make tiny holes
Sprinkle your sesame seeds on top
Preheated oven 400 F
Notes: *When ready and hot, sprinkle some water to get that red glow.
