Shir Kadu

Hi guys, I am so glad I can share these very traditional recipes from home that are absolutely delicious. Some aren’t vegan but since I have become vegan, I have found great substitutions that taste absolutely amazing and I cannot wait to share all of them with you. Today’s recipe is my mom’s special called Shir Kadu (Shir in persian means milk and kadu means pumpkin) this meal is especially good for a sensitive stomach; of course, you should always consult with your doctor before eating anything, especially if you have an extra sensitive stomach. The best part is you only need 3 things: pumpkin or squash, milk and water.

  • Water 1 cup
  • Pumpkin 1 cup chopped
  • Almond milk 1 1/2 cup

Instructions:

  1. Bring water to a boil then add pumpkin and let cook until it’s soft for 30 mins
  2. Once the pumpkin is cooked, and nice and soft add almond milk and keep it boiling for 5-10 mins.
  3. Voila! It’s done!

Notes: the more you cook it the sweeter it gets, if for some reason your pumpkin is not sweet enough, you can always add a tbs of agave. Enjoy!
