My morning delight. This is the easiest and simplest pudding I’ve ever made. It is healthy, quick and super delicious. Chia seeds are the richest plant source of omega-3 fatty acids. They are a complete protein, containing all nine essential amino acids that cannot be made by the body. Omega-3 is a healthy fat that is necessary for a healthy lifestyle.
What you’ll need:
- 1 cup Coconut milk (or almond milk)
- 1 1/4 Tbs chia seeds
- 1/3 cinnamon
- 1/3 coconut flakes
- 1/2 Banana
- 1/2 Tbs pumpkin seeds
Note: Adding 1/2 tbs agave gives it a nice mild taste.
- Combine chia seeds, cinnamon and coconut flakes and coconut milk in a bowl stir to prevent clumps from forming.
- Leave for 8 hours or overnight in the fridge.
- In the morning, cut banana for topping and pumpkin seeds for flavor. (Agave can also be added)
