Chia Seed Pudding

My morning delight. This is the easiest and simplest pudding I’ve ever made. It is healthy, quick and super delicious. Chia seeds are the richest plant source of omega-3 fatty acids. They are a complete protein, containing all nine essential amino acids that cannot be made by the body. Omega-3 is a healthy fat that is necessary for a healthy lifestyle.

What you’ll need:

  • 1 cup Coconut milk (or almond milk)
  • 1 1/4 Tbs chia seeds
  • 1/3 cinnamon
  • 1/3 coconut flakes

Topping:

  • 1/2 Banana
  • 1/2 Tbs pumpkin seeds

Note: Adding 1/2 tbs agave gives it a nice mild taste.

Instructions:

  1. Combine chia seeds, cinnamon and coconut flakes and coconut milk in a bowl stir to prevent clumps from forming.
  2. Leave for 8 hours or overnight in the fridge.
  3. In the morning, cut banana for topping and pumpkin seeds for flavor. (Agave can also be added)chia-seed-pudding-recipe-vegan
