This salad was inspired by my dear childhood best friend. She is an amazing cook. Visiting her this weekend was the best decision. She is not a vegan but knowing that I will be visiting her she made me this light but filling vegan super salad. I loved it so much that I couldn’t resist but share it with you. Beautiful and delicious things should be shared.
This salad is: Light, quick, healthy, filling, delicious. Health benefits of arugula.
- 3 Radish
- 2 medium Tomatoes
- 2 Cucumbers
- 1/2 onion
- 1/2 Lemon
- 1/3 Quinoa
- 1 medium Avocado
- Extra Virgin Olive Oil
- Wash your veggies, then cut them the way you prefer.
- Let your quinoa sit in a hot water pot for few minutes until ready.
- Add all your ingredients in a bowl, add a spoon of olive oil and squeeze your lemon juice on top, then mix together. Voila! It is ready and delicious!
*Note: When your onion cut and ready leave in a small bowl filled with water. Add the other half of lemon juice into this bowl and let it sit for few minutes. This procedure will take that onion smell away, plus it’ll make it soft and perfect.
